How did you originally get into cooking?

I suppose I sort of accidentally went to culinary school right out of high school. My older brother Trevor was moving to Chicago to study music production, so I obviously needed to find a school there too (cause we were inseparable) and I googled "Chicago College" and Le Cordon Bleu was the first result. I thought to myself, "Cooking seems like a good skill set to have..." and here we are.

I got my training right off the bat, but I got excited to see where cooking could take me and ended up traveling all over the world from Alaska to Antarctica. My experiences have made me an incredibly resourceful chef, and my specialty is making a delicious meal with whatever happens to be available. While most chefs seek out the best or rarest ingredients, I try to cook like a real person, using what is readily available and isn't going to break the bank AND is going to be healthy for me to eat.

Does working as a professional chef make you dislike doing it at home or cooking for friends?

I think my career makes cooking at home even more fun because I can execute complicated recipes easily and help my friends throw Thanksgiving or Christmas dinners like a professional chef!

What’s your favorite thing to make?

My favorite thing to make is whatever vegetables are fresh and in season. I'm very passionate about cooking and eating a plant-based diet that's good for you and the planet. Nothing would make me happier than being able to grow all of my own food (I have a farm back in Iowa I want to retire to sooner rather than later) and running some sort of farm to table restaurant.

Is cooking sexy?

Cooking is sexy like self-care is sexy. Everyone has to eat, and being confident and independent in the kitchen is a major turn on to me. I tend not to get along with the kind of folks that say, "I can't even boil water," because I can't believe that you haven't bothered to learn how to feed yourself when you have to eat 3 times a day!

What’s the best and what’s the worst thing about being a chef?

The best thing about being a chef is able to create delicious, humble and healthy meals that nourish your friends and families bodies, souls and are good for the earth. The worst part about being a chef is having to use your powers for good and not evil and buy/cook/eat responsibly and teach others around you to do the same.

In a hypothetical situation where you have to choose between being a chef and being an adult content maker which one would you want?

LOL, that's not hypothetical at all! It's a problem I face every day. Cooking is my passion, and I think my calling in life is to make cooking/eating sustainably cool, but adult content pays the bills! It's funny, I can't give my cooking videos away for free on YouTube, but I take a slutty hookup video and rake the money in. I think if I was making an adult and responsible decision though I'd realize that a career in cooking is probably more sustainable than a career in adult entertainment.

What advice do you have for someone who wants to get into cooking?

My advice is to find a source for organic, local, and seasonal vegetables (I get mine delivered to my door weekly) and just force yourself to cook and eat them! Stocking your fridge with whole foods forces you to come up with creative ways of preparing them and reduces food waste created by going to the grocery store and buying whatever you feel like. Plus, coming home and having to whip up dinner with whatever is available is like being on your own cooking competition reality show!
